The leather strops polish the blade and assist in making them very sharp. I sharpen my Svord knife using this method, admittedly after straightening the edge a bit on a stone. |

Warrick EdmondsRe: Knife sharpeningAndrew, no worries. But just to clarify, the 15 degrees applies to the actual cutting edge, not the grind profile of the knife blade itself. In fact their research showed that it didn't matter what the knife looked like or the steel it was made from, be it cut throat razor or camp knife the best angle was 15 degrees per side. Even better if you can get that last bit done on a super fine or polishing media, so the edge is actually polished sharp (not always possible so don't sweat it) |

I am fortunate to have an excellent finishing stone plus a quality leather strop and diamond paste coated felt strop. Very great for those razor sharp edges. Pun fully intended. |

Biggest trouble I have with edge retention is chefs knives being used to cut wallpaper well I needed a sharp knife was my wifes reply and other abuse and neglect type problems. The 15 degree info is interesting and Ill be trying that.I use a lansky with a modified (drilled and inserted rod) smiths diamond combination stone. https://www.smithsproducts.com/diamond-combination-sharpener. This came about because I destroyed my natural stones that came with the lansky trying to sharpen my gerber s30v and, being Jewish, adapting the smiths to fit was a much cheaper option than purchasing lansky diamonds. Man that s30v takes some work to get sharp but you could cut the c hair off a flea straight down the middle once you get it there, the factory edge was mediocre. knife is beautiful though. My day to day knife now is the free knife that came with the smiths sharpener that is a gerber gator fixed blade look a like. Its a shame theyre not available seperatly as theyre quite a nice utility knife |
