Luis VazquezHere is a recipe I use it for Doves, Ducks and QuailI only use the meat of the breasts for this, cut in to 1 inch pieces and I wrap each one in a half slice of thick cut bacon. Also need Cherry tomatoes, and onions and bell peppers cut in to 1.5 to 2 inch pieces I use metal sticks but sometime the wood ones, make sure these are soaked in water before using them so the dont burn. Put them all together, add the veggies more or less to your taste buds, some like more onions some like more tomatoes, etc. The put them on the grill. Dont over burn the bacon or veggies, and the meat does not need any marinade. This recipe is very good for red meat like the dove and duck or white meat like the quail we hunt here in the dessert. Pair it with a good red wine or cold beer and enjoy. Rabbit and Deer are also really good with this recipe. For those non game eating picky people, beef or shrimp will also work very well. |
